Brisket

A flavorful cut that is tender when cooked slowly, at low temperatures.  Traditionally used for corned beef, smoking, or barbeque.  Here we keep them whole, so this is a big cut of meat ideal for smoking! This is a whole brisket weighing about 10 lbs.
